Pai Mu Tan

Pai Mu Tan

Fujian province is the birthplace of the loose leaf white tea that we drink today! Each year after the mild winter and spring rains, farmers begin plucking the newest growth from their tea bushes. These delicate leaves are not pan fired or steamed, they are simply left out in the sun to dry for several days. If cloudy or rainy days make conditions difficult to complete the drying process, the leaves are brought indoors to a slightly heated room. They are then packaged and ready for you to steep. Although a simple process, our Pi Mu Tan leaves offer a smooth and delicate flavor with hints of honey, nuances of apricot, and sweet grassy notes. The finish is a crisp, clean and passes over your palate with the smoothness of silk. Absolutely delicious hot or iced!
